Crohn's-Friendly Korean Yukjeon (Beef Pancakes)

🫶 For those with Crohn’s or sensitive digestion, here’s a soft, savory Korean classic—made lighter and gentler on the stomach.

🍳 Ingredients (2 servings)

  • Thinly sliced lean beef (like eye round or top round): 200g

  • Egg: 1 (lightly beaten)

  • Rice flour: 2 tbsp (gentler than wheat flour)

  • Zucchini or carrot (optional, finely grated): 1 tbsp

  • Salt: just a pinch

  • Olive oil spray (or very minimal canola oil)

🥄 Cooking Steps

1️⃣ Prep the beef

  • Pat beef dry and season very lightly with salt

  • If using veggies, press out moisture and mix into egg

2️⃣ Coat with rice flour

  • Lightly dust beef slices on both sides with rice flour

  • Helps the egg stick and keeps it gentle on digestion 😊

3️⃣ Dip in egg wash

  • Coat each slice evenly in the beaten egg

4️⃣ Pan-fry gently

  • Use a ceramic or non-stick pan

  • Spray or lightly brush oil (you should barely see it!)

  • Cook each side on low heat for 1–2 minutes until light golden

💡 Cooking Tips

✅ Use lean cuts – less fat, easier to digest
✅ Avoid strong seasoning – skip pepper or garlic
Low heat = tenderness – keeps the texture soft and easy on your tummy
✅ For extra fluff, add a tsp of water to the egg 🥚

🧊 Storage Tips

  • Refrigerate: up to 2 days in sealed container

  • Freeze: separate layers with parchment, up to 2 weeks

  • Reheat by steaming or microwaving with cover to retain softness
